To celebrate the end of the school year in May, the Jones headed out to a campground for a fun night of camping. We stayed at the Natural Bridge KOA in a camping cabin. We would highly recommend this campground. It was quiet and clean! It was fun to cook all of our meals over the campfire; we kept it simple because we had limited cooking tools and no refrigeration other than a cooler. Here are some of our favorite campfire recipes.
Pizza Mountain Pies
Mountain pies are awesome campfire recipes; they are like toasted sandwiches. You do need a mountain pie maker, but the possibilities of combinations are endless. Pizza mountain pies are quick and easy to create and everyone can customize them to what they prefer.
For pizza mountain pies you need:
Cooking spray
One loaf of bread of your choice
Jar of pizza sauce
Bag of mozzarella cheese or a bag of the pizza cheese mix
Pepperoni, precooked sausage, and any of your favorite toppings
Directions:
1. Spray the inside of the mountain pie maker with cooking spray.
2. On one side of the mountain pie maker place the slice of bread. Then spread the pizza sauce, cheese, and toppings on your slice of bread.
3. Place the other piece of bread on top and then close the mountain pie maker.
4. Cook over the coals for about three to five minutes. Remember to place the mountain pie make on a heat safe surface when you open it and use metal tongs to help remove the pizza.
5. Wait at least five minutes for the pizza to cool. It’s hot. Trust me.
Breakfast Mountain Pies
Use up some of the leftover ingredients from your pizza mountain pies the next morning at breakfast!
Ingredients
Cooking spray
Bag of frozen hashbrowns
Tomato
pepperoni/pre-cooked sausage/mushrooms
¼ cup shredded cheddar cheese
salt/pepper
Directions
1. Spray the mountain pie maker with cooking spray.
2. Place hashbrowns in maker so it fills the bottoms of both sides.
3. Add cheese, tomato, sausage, mushrooms, pepperoni (or whatever combination you like)
4. Sprinkle with salt and pepper.
5. Close the mountain pie maker and cook over coals until the hashbrowns are golden brown.
6. Remove carefully from maker and let cool. Enjoy!
Potato and Sausage Foil Packets
Foil packets are great campfire recipes because they require little clean up. Depending on when you make then on your trip, you could prep the vegetables at home to make for even easier cooking while camping. You can also add whatever veggies you want to your packet.
Ingredients:
1 package of smoked sausage like these
1 pound washed baby red potatoes cut into slices
1 small onion diced
1 zucchini sliced
1 tablespoon Italian seasoning
1 teaspoon of smoked paprika
salt/pepper
4 tablespoons of butter, divided
Directions:
1. Prepare the vegetables and sausage by cutting them into uniform pieces. Place in a bowl or large piece of foil and toss with Italian seasoning, smoked paprika, salt, pepper.
2. Divide the mixture into fourths. Place each portion onto a piece of foil. Put a tablespoon of butter on top.
3. Seal foil packets tightly and cook over campfire for thirty minutes or until the vegetables are tender. Carefully remove with tongs. Let cool and enjoy!
Banana S’mores
Is it really a camping trip if you don’t enjoy dessert? We will never turn down a s’more but we also enjoy trying new things too. Banana s’mores are tasty, customizable, and easy campfire recipies.
Ingredients:
Bunch of bananas
1 bag mini marshmallows
1 bag mini chocolate chips
Directions
1. Leave the peel on the banana. Make a slice through the banana to cut it open.
2. Stuff the banana with marshmallows and chocolate chips.
3. Wrap in foil and cook over the campfire for about ten minutes until the banana no longer feels firm when squeezed with tongs.
4. Let cool then enjoy.
You can create any fun combination of flavors here. Adding a scoop of peanut butter or a drizzle of caramel sauce would be delicious.
